There’s a big New Year’s Eve party at Harry’s parents’ house and he cooks for Kat because she hasn’t eaten and ends up feeding half the party-goers. He makes a couple of easy dishes which are easy to bulk up and used what was in the fridge (leftover party food) and cupboard staples.

Harry’s easy stir-fry

Ingredients

4 x pre-cooked chicken breasts

Sliced and chopped raw veg (leftover crudites – carrot sticks, sliced peppers, spring onions, cauliflower and broccoli florets, celery sticks, baby tomatoes)

Pack of instant dried noodles

Soy sauce, cooking oil and seasoning to taste. 

 

Method

Cook the noodles in boiling water as per packaging instructions

 

Shred the cooked chicken and chuck in a hot frying pan or wok. Fry in the oil and soy sauce until the vegetables have softened.

 

Drain the noodles and add to the pan. Toss until all ingredients are blended together. Serve at once.

 

Harry’s Quick and Dirty Pasta Bake

Ingredients

 

Canned tuna

Dried pasta

Frozen mixed veg

Condensed Mushroom soup

Cheese for grating

 

Method

 

Cook the pasta as per packaging instructions. Drain and transfer to an oven-proof dish

 

Place the soup, tuna and frozen veg in a large pan and heat through.

 

Pour the soup mixture over the pasta and stir to blend thoroughly. Make sure the mixture is distributed evenly across the dish.

 

Add a generous covering of grated cheese then put in the oven at 180C for 15-20 minutes or until the mixture is bubbling and the cheese is melted and golden brown.

Kat’s Chicken Gloop

 

Kat is a chuck it in a pot with a jar of sauce kind of cook but she makes this for Harry because she doesn’t want him to feel like he has to do everything. Thankfully he has a well-stocked kitchen!

Ingredients

 

4 chicken breasts

Garlic and onions

Diced fresh (or frozen vegetables – whatever you have to hand or family favourites

Double cream

Chicken stock

Seasoning to taste

 

Method

 

Fry the onions and garlic.

Add the diced chicken and brown

Transfer into an ovenproof dish, add the veg, chicken stock and double cream. Stir all together. Place in the oven at 180C (the magic number!) and cook for 30-40 minutes.

Serve with rice, pasta or chips as preferred.
