Gwen’s Easy Blackberry Ice-Cream Recipe from
Ingredients
- 300g of freshly picked or frozen blackberries
- 300ml of double cream
- One small can of condensed milk
- Half a teaspoon of cinnamon (ground)
- One teaspoon of vanilla extract
- One teaspoon of honey
Method
- Place the blackberries and honey in a pan and bring gently to the boil. Simmer for six minutes, or until the berries have broken down, stirring as needed. Remove from the heat and blend. Allow to cool and then chill in the fridge for at least half an hour.
- Whisk the cream, condensed milk and cinnamon together, until the mixture has thickened enough to create peaks. Pour the mixture in to a freezer proof container with a volume of at least one litre and swirl in the puree with a spoon.
- Cover the container and place in the freezer for a minimum of four hours before serving.
Gwen’s Blackberry Gin Recipe
Ingredients
- 300g of freshly picked blackberries
- 150 grams of granulated sugar
- One bottle of gin (750ml) – supermarket brands will do, don’t waste the good stuff!
Method
- Place the blackberries and sugar in a large glass jar, at least one and half litres in volume. Add the gin, place the lid on the jar and shake gently to help the sugar dissolve.
- Store out of direct heat and sunlight, rotating the jar once a day for seven days.
- After a minimum of fourteen days, strain the gin through filter paper of a tightly netted sieve. Decant the gin into suitable containers and save some for a taste test. Enjoy!
Cook’s tip: You can also use the sieved blackberries to make a delicious dessert.
